Hi Everyone!

I am new to this forum as well.

Both my husband and I work full time. I start to work at 4am and get home about 12pm. My husband works from 9am until 6pm. Children are 18 & 19 yrs old (intl adopted 4 yrs ago), and they usually have activities after school & do not get home until around 5-6pm. I need to be in bed by 730-8pm. Family meals are next to impossible but we do try. We have found that cooking a large portion of a main course, such as a pot roast with carrots & potatoes, etc in it, works well for us. We can serve the roast the first meal, second meal we can pull the roast apart and have roast beef sandwiches (like Arbys), and make different side dishes like frozen vegetables, third meal we use roast & veges that remain for vegetable soup. I like to serve baked potatoes or a salad with the soup (these can be prepared on weekend then reheated). We also use a crock pot. Doing most of the cooking on the weekend works well for us! Life is hard sometimes!!
